1 cup rolled oats

1 cup coconut milk (or almond milk)

1/2 ripe banana, mashed

1/2 cup diced fresh pineapple

1/4 cup shredded coconut (unsweetened)

1 tablespoon chia seeds

1 tablespoon honey or maple syrup (adjust to taste)

1/2 teaspoon vanilla extract

A pinch of sea salt

Fresh mint leaves for garnish

Instructions
 

In a mixing bowl, combine the rolled oats, coconut milk, mashed banana, and vanilla extract. Stir until well mixed.

    Add the diced pineapple, shredded coconut, chia seeds, honey or maple syrup, and sea salt to the oat mixture. Mix thoroughly to ensure everything is well combined.

      Divide the mixture evenly into two small glass jars or airtight containers. Seal them tightly.

        Refrigerate the jars overnight (or for at least 4 hours) to allow the oats and chia seeds to soak up the liquid and become creamy.

          In the morning, give the oats a good stir. If desired, add a splash more coconut milk to adjust the consistency.

            Top each serving with extra diced pineapple, additional shredded coconut, and fresh mint leaves for a refreshing finish.

              Enjoy cold straight from the fridge or let it sit at room temperature for about 10 minutes before serving!
