Tuna Pasta Salad

8 oz (225 g) rotini or fusilli pasta

1 can (5 oz) solid white tuna in water, drained

1 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/4 cup black olives, sliced

1/2 cup sweet corn (canned or frozen, thawed if frozen)

1/4 cup fresh parsley, chopped

1/3 cup mayonnaise

2 tablespoons Greek yogurt (optional for added creaminess)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

Salt and pepper to taste

Optional: 1 teaspoon dried oregano or Italian seasoning

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the rotini or fusilli pasta and cook according to package instructions until al dente (about 8-10 minutes). Once cooked, drain the pasta and rinse it under cold water to stop the cooking process. Set aside to cool.

    Prepare the Vegetables: While the pasta is cooling, chop the cherry tomatoes, cucumber, and red onion. Slice the black olives and chop the parsley.

      Make the Dressing: In a large mixing bowl, combine the mayonnaise, Greek yogurt (if using), Dijon mustard, lemon juice, salt, pepper, and oregano or Italian seasoning. Whisk until smooth and well blended.

        Combine Ingredients: Add the cooled pasta, drained tuna, cherry tomatoes, cucumber, red onion, black olives, sweet corn, and chopped parsley to the bowl with the dressing.

          Mix Gently: Using a spatula, gently mix all the ingredients together until everything is evenly coated with the dressing. Adjust seasoning with more salt or pepper if required.

            Chill and Serve: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together. Serve chilled or at room temperature.
