12 oz penne pasta

1 lb ground turkey

2 cups mushrooms, sliced (button or cremini)

1 medium onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

      Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes. Season with salt, pepper, thyme, and oregano.

        Add the Mushrooms: Stir in the sliced mushrooms and cook for an additional 5 minutes until they are tender and have released their moisture.

          Create the Sauce: Pour in the chicken broth and bring it to a simmer. Let it reduce slightly for about 3-4 minutes. Then, mix in the heavy cream and allow the sauce to thicken for another 5 minutes.

            Combine the Pasta: Once the sauce is ready, add the cooked penne to the skillet. Toss everything together until the pasta is evenly coated with the sauce. Mix in the grated Parmesan cheese, stirring until melted and creamy.

              Serve: Taste and adjust seasoning with more salt and pepper if needed. Serve hot, garnished with freshly chopped parsley and additional Parmesan cheese on top if desired.
