Whole wheat tortillas serve as the foundation for Turkey and Swiss Pinwheels, providing a nutritious and hearty base. Unlike regular white flour tortillas, whole wheat tortillas are made from whole grains, retaining the bran, germ, and endosperm of the wheat kernel. This means they are richer in fiber, which is essential for digestive health, and they offer a range of vitamins and minerals.

Ingredients

4 large whole wheat tortillas

8 oz sliced turkey breast (smoked or regular)

8 oz Swiss cheese, sliced

1 cup baby spinach leaves

½ cup roasted red peppers, sliced

¼ cup cream cheese, softened

1 tsp Dijon mustard

½ tsp garlic powder

Salt and pepper, to taste

Optional: Fresh basil or dill for added flavor

Instructions

Prepare the Cream Cheese Mixture:

    - In a small bowl, combine the softened cream cheese, Dijon mustard, garlic powder, salt, and pepper. Mix until smooth and well combined.

      Assemble the Pinwheels:

        - Lay out one tortilla flat on a clean surface. Spread a thin layer of the cream cheese mixture evenly over the entire tortilla.

          - On top of the cream cheese layer, place 2 oz of sliced turkey breast, ensuring it covers the tortilla evenly.

            - Add a layer of Swiss cheese, followed by a handful of baby spinach leaves, and a few slices of roasted red peppers.

              - If using, sprinkle some fresh basil or dill over the top for an extra burst of flavor.

                Roll the Tortilla:

                  - Starting from one end, carefully roll the tortilla tightly into a log shape. Make sure to keep the fillings tucked in as you roll.

                    Slice the Pinwheels:

                      - Once rolled, use a sharp knife to slice the log into 1-inch wide pieces. Repeat the process with the remaining tortillas and fillings.

                        Serve:

                          - Arrange the pinwheels on a platter. They can be served immediately or refrigerated for an hour to firm up before serving.
