1 tablespoon olive oil

1 onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

1 tablespoon lime juice

½ cup fresh cilantro, chopped

For the Watermelon Slaw:

2 cups watermelon, diced (seeds removed)

1 cup red cabbage, thinly sliced

½ cup carrots, grated

½ cup red onion, finely sliced

1 tablespoon apple cider vinegar

1 tablespoon honey

1 tablespoon lime juice

Salt and pepper, to taste

To Assemble:

8 small corn tortillas

Fresh cilantro leaves, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Turkey Filling:

    - Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes.

      - Stir in minced garlic and cook for an additional 30 seconds until fragrant.

        - Add ground turkey to the skillet, breaking it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes.

          - Sprinkle in the cumin, smoked paprika, chili powder, salt, and pepper. Mix well and cook for another 2 minutes.

            - Stir in lime juice and cilantro, then remove from heat. Set aside.
