Ingredients

8 oz (227g) high-quality dark chocolate (70% cocoa), chopped

1/2 cup (120ml) heavy cream

2 tablespoons unsalted butter, room temperature

1 teaspoon vanilla extract

Pinch of sea salt

1/2 cup (60g) cocoa powder (for dusting)

1/4 cup (30g) crushed freeze-dried strawberries (optional, for a fruity twist)

Edible gold leaf (optional, for decoration)

Instructions

Melt the Chocolate: Place the chopped dark chocolate in a heatproof bowl. In a saucepan, heat the heavy cream over medium heat until just starting to simmer. Pour the hot cream over the chocolate and let it sit for about 1-2 minutes to soften the chocolate. Stir gently until the mixture is smooth and fully combined.

Add Butter and Flavor: Once the chocolate and cream mixture is smooth, add the unsalted butter, vanilla extract, and a pinch of sea salt. Stir until the butter is fully melted and incorporated into the mixture.

Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 2 hours, or until the mixture is firm enough to scoop and shape.

Form the Truffles: Once the mixture is set, use a small scoop or your hands (using gloves for easier handling) to form small balls, about 1-inch in diameter. Place the formed truffles on a parchment-lined baking sheet.

Coat the Truffles: Roll each truffle in cocoa powder until fully coated. For an extra touch, you can also roll some truffles in crushed freeze-dried strawberries for a vibrant flavor and color contrast.

Decorate (Optional): If desired, use a toothpick to place small pieces of edible gold leaf on top of each truffle for a touch of luxury.

Chill Before Serving: Return the truffles to the refrigerator for about 30 minutes to firm up again, if necessary.

Serve: Arrange the truffles in a beautiful box or on a decorative plate. They make a perfect gift for your Valentine!
