Ingredients

16 large cremini or button mushrooms

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/4 cup mayonnaise

4 cloves garlic, minced

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1/2 teaspoon red pepper flakes (optional, for a kick)

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Olive oil for drizzling

Extra grated Parmesan for topping

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Mushrooms: Gently clean the mushrooms with a damp cloth. Remove the stems and carefully hollow out the caps with a small spoon or a paring knife, creating room for the filling. Set the mushroom caps aside on a baking sheet arranged gill-side up.

Make the Filling: In a medium bowl, combine the softened cream cheese, grated Parmesan, mayonnaise, minced garlic, Italian herbs, red pepper flakes (if using), and chopped parsley. Season with salt and pepper to taste. Mix until the filling is smooth and well-combined.

Stuff the Mushrooms: Using a spoon or a piping bag, fill each mushroom cap with the garlic-Parmesan mixture, heaping it slightly above the rim.

Prepare for Baking: Drizzle a little olive oil over the stuffed mushrooms and sprinkle with additional grated Parmesan cheese for added flavor and a golden finish.

Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the mushrooms are tender and the filling is golden and bubbly.

Cool and Serve: Once cooked, remove the mushrooms from the oven and let them cool for a few minutes. Garnish with extra chopped parsley before serving.
