Vietnamese Summer Rolls with Chicken

8 rice paper wrappers

1 cup cooked chicken breast, shredded

1 cup rice vermicelli noodles, cooked according to package instructions

1 cup lettuce leaves, shredded (preferably butter or romaine)

1/2 cup fresh mint leaves, loosely packed

1/2 cup fresh cilantro, loosely packed

1/2 cup shredded carrots

1/2 cucumber, julienned

1 small red bell pepper, julienned

1/4 cup peanuts, crushed (optional)

1/4 teaspoon salt

1 tablespoon soy sauce

1 tablespoon sesame oil

Water for soaking wrappers

Instructions
 

Prepare the Filling: In a bowl, combine the shredded chicken, cooked rice vermicelli, shredded carrots, julienned cucumber, red bell pepper, and chopped herbs (mint and cilantro). Drizzle with soy sauce, sesame oil, and a sprinkle of salt. Toss gently to mix all the ingredients evenly.

    Soak the Rice Paper Wrappers: Fill a large shallow dish with warm water. One at a time, carefully dip each rice paper wrapper into the water for about 10-15 seconds, or until softened. Remove and let excess water drip off. Lay the softened wrapper flat on a clean surface or cutting board.

      Assemble the Rolls: Place a small amount of the filling mixture (about 2-3 tablespoons) in the center of the rice paper wrapper. Arrange some shredded lettuce and a few pieces of peanuts, if using, on top of the filling.

        Roll it Up: Start by folding the bottom of the wrapper over the filling, then fold in the sides like you’re making a burrito. Roll it up tightly but gently from the bottom to the top. Repeat the process with the remaining wrappers and filling.

          Serve: Serve the summer rolls chilled or at room temperature with your choice of dipping sauce, such as hoisin-peanut sauce or a tangy nuoc cham.
