Warm and Cozy Chicken Noodle Soup

1 lb (450g) boneless, skinless chicken breasts

8 cups (2 liters) low-sodium chicken broth

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, chopped

1 tsp dried thyme

1 tsp dried rosemary

1 bay leaf

1 cup (150g) egg noodles

1 cup (150g) frozen peas

2 tbsp olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and fragrant.

    Cook the Chicken: Push the vegetables to the side of the pot and add the chicken breasts. Sear the chicken for about 2-3 minutes on each side until lightly browned.

      Add Broth and Spices: Pour in the chicken broth and add thyme, rosemary, bay leaf, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for 20-25 minutes, or until the chicken is cooked through.

        Shred the Chicken: Once the chicken is cooked, remove it from the pot and place it on a cutting board. Shred the chicken using two forks while it’s still warm, then return the shredded chicken to the pot.

          Cook the Noodles: Add the egg noodles to the pot and cook for an additional 7-9 minutes or until the noodles are tender. Stir in the frozen peas during the last 2 minutes of cooking.

            Adjust Seasonings: Taste the soup and adjust the seasoning if necessary. Remove the bay leaf before serving.

              Serve and Garnish: Ladle the warm soup into bowls, garnish with freshly chopped parsley, and serve with crusty bread on the side for a cozy meal.
