4 cups watermelon, cubed and seeded

1 large cucumber, peeled and sliced

1/4 cup fresh mint leaves, plus extra for garnish

2 tablespoons honey (or agave syrup for a vegan option)

Juice of 2 limes

2 cups cold sparkling water

Prepare the Ingredients: Start by cutting the watermelon into cubes and the cucumber into slices. Make sure to remove any seeds from the watermelon for a smoother texture.

    Blend the Base: In a blender, combine the cubed watermelon, sliced cucumber, fresh mint leaves, honey, and lime juice. Blend until smooth and well combined.

      Strain (Optional): If you prefer a smoother drink, pour the blended mixture through a fine mesh sieve into a large pitcher, pressing down with a spoon to extract all the juice. This step is optional and can be skipped for a more rustic texture.

        Combine with Sparkling Water: Slowly add the cold sparkling water to the pitcher, stirring gently to combine without losing too much fizziness.
