Ingredients

4 cups watermelon, diced and seedless

1 cup fresh lemon juice (about 4-6 lemons)

½ cup granulated sugar (adjust based on sweetness preference)

1 cup cold water

Lemon slices and mint leaves (for garnish, optional)

Popsicle molds and sticks

Instructions

Prepare the Watermelon: Start by cutting the watermelon into small chunks, ensuring that all seeds are removed, if any. Blend the diced watermelon in a blender until smooth.

Strain the Juice (Optional): If you prefer a smoother texture, strain the blended watermelon puree through a fine mesh sieve or cheesecloth to remove pulp.

Combine Ingredients: In a large pitcher, mix the watermelon juice with freshly squeezed lemon juice, granulated sugar, and cold water. Stir well until the sugar completely dissolves. Taste and adjust sweetness by adding more sugar or lemon juice as desired.

Pour into Molds: Carefully pour the watermelon lemonade mixture into popsicle molds, leaving a little space at the top for expansion as they freeze. Insert popsicle sticks into each mold.

Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours or until completely solid.

Unmold and Serve: To remove the pops from the molds, run them under warm water for a few seconds. Gently pull the popsicles out and serve immediately. Garnish with lemon slices and mint leaves for a refreshing touch!
