Ingredients

4 cups seedless watermelon, cubed

1 tablespoon lime juice (freshly squeezed)

1-2 teaspoons Tajín seasoning (adjust to taste)

Wooden popsicle sticks

Additional Tajín for garnish (optional)

Instructions

Prepare the Watermelon: Start by cutting your seedless watermelon into small cubes. You can use a blender for a smoother texture or just mash them with a fork if you prefer some chunks.

Blend the Mixture: In a blender or food processor, combine the cubed watermelon and lime juice. Blend until smooth or to your preferred consistency. Taste and adjust the sweetness or tartness with more lime juice if needed.

Add Tajín: Sprinkle the Tajín seasoning into the blended watermelon mixture. Blend again briefly to incorporate the seasoning, giving it an extra kick.

Fill the Molds: Pour the watermelon mixture into popsicle molds, filling them about three-quarters full to allow for expansion. Insert popsicle sticks into the center of each mold.

Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours or until completely solid.

Unmold and Serve: To remove the pops, run warm water briefly over the outside of the molds. Gently pull on the popsicle stick to remove them. If desired, sprinkle additional Tajín on top for an extra flavor boost.

Enjoy: Serve the watermelon pops immediately on a sunny day for a refreshing treat full of flavor!
