Ingredients

1/2 cup extra-virgin olive oil

1/4 cup balsamic vinegar

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup

1 small garlic clove, finely minced

1/2 teaspoon sea salt

1/4 teaspoon freshly ground black pepper

1 teaspoon dried Italian herbs (optional)

A pinch of red pepper flakes (optional)

Instructions

In a medium mixing bowl, combine the balsamic vinegar, Dijon mustard, honey (or maple syrup), minced garlic, sea salt, and black pepper.

Slowly whisk in the olive oil until the mixture is well combined and emulsified. This should take about 30 seconds to a minute.

If desired, add the dried Italian herbs and red pepper flakes for an extra layer of flavor. Stir to combine.

Taste the vinaigrette and adjust the seasoning if necessary. You can add a little more honey for sweetness or more vinegar for tanginess, depending on your preference.

Transfer the vinaigrette to a glass jar or airtight container and store it in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld beautifully.

Shake or stir well before serving over your favorite salad, grilled vegetables, or even as a marinade for meats.
