Ingredients

2 large flatbreads (store-bought or homemade)

1 cup cooked, shredded chicken

1 cup enchilada sauce (red or green, your choice)

1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

1/2 cup black beans, rinsed and drained

1/2 cup corn (canned or frozen)

1 small red onion, finely diced

1 avocado, sliced

1/4 cup cilantro, chopped

1 tablespoon olive oil

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

Lime wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Chicken Mixture: In a bowl, combine the shredded chicken, enchilada sauce, black beans, corn, red onion, cumin, chili powder, salt, and pepper. Mix until all ingredients are well coated with the enchilada sauce.

Assemble the Flatbreads: Place the flatbreads on the prepared baking sheet. Spoon the chicken mixture evenly over each flatbread, spreading it out to the edges.

Add Cheese: Sprinkle the shredded cheese generously over the top of the chicken mixture on both flatbreads.

Bake: Place the baking sheet in the preheated oven and bake for about 12-15 minutes, or until the cheese is bubbly and golden brown.

Garnish: Once out of the oven, let the flatbreads cool for a couple of minutes. Top with fresh avocado slices and chopped cilantro.

Serve: Cut the flatbreads into pieces and serve warm with lime wedges on the side for drizzling.
