2 cups fresh corn kernels (or 1 can of corn, drained)

1 ripe avocado, diced

1 medium red bell pepper, finely chopped

1 small red onion, finely diced

1 medium jalapeño, seeds removed and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt and pepper, to taste

Optional: 1/2 teaspoon cumin for added flavor

Prep the Ingredients: If using fresh corn, remove the kernels from the cob. You can use a sharp knife for this. If you’re using canned corn, simply drain it and set aside.
