1/4 cup olive oil

Juice and zest of 2 large lemons

4 cloves garlic, minced

2 tablespoons honey

1 tablespoon Dijon mustard

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Marinate the Chicken: In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, honey, Dijon mustard, oregano, thyme, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

    Preheat the Grill: If using a grill, preheat it to medium-high heat (about 375°F to 400°F). If using an oven, preheat it to 400°F.

      Cook the Chicken: Once the grill is hot, remove the chicken from the marinade (reserve the marinade) and place the breasts on the grill. Cook for about 6-7 minutes per side until the internal temperature reaches 165°F and the chicken has nice grill marks. If using the oven, place the marinated chicken on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until cooked through.

        Reduce the Marinade: While the chicken is cooking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium-high heat, then reduce the heat and let it simmer for 5-7 minutes until slightly thickened. This will be used as a sauce.
