Ingredients

1 cup orzo pasta

2 cups vegetable broth or water

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (red or yellow), diced

1/4 red onion, finely chopped

1/4 cup fresh dill, chopped

1/4 cup feta cheese, crumbled

1/4 cup olive oil

Juice and zest of 1 lemon

1 tablespoon honey (or agave syrup for a vegan option)

Salt and pepper to taste

Instructions

Cook the Orzo: In a medium saucepan, bring the vegetable broth (or water) to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

Prep the Vegetables: While the orzo is cooking, prepare your vegetables. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced bell pepper, and finely chopped red onion.

Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, honey, salt, and pepper until well combined.

Combine Ingredients: Once the orzo has cooled, add it to the bowl with the vegetables. Pour the dressing over the salad and toss gently until everything is evenly combined.

Add Freshness: Fold in the chopped dill and crumbled feta cheese, being careful not to break the feta too much.

Chill and Serve: For the best flavor, cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld. Serve chilled or at room temperature.
