1 cup cherry tomatoes, halved

1 cucumber, diced

1 red onion, thinly sliced

Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, dried oregano, minced garlic, salt, black pepper, and red pepper flakes (if using). Place the chicken breasts in a resealable plastic bag or a shallow dish, and pour the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 1 hour (or up to 4 hours for more flavor).
