Zesty Lime & Cilantro Rice Bowls

1 cup jasmine rice

2 cups vegetable broth (or water)

Zest and juice of 2 limes

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cumin

1/2 teaspoon salt (adjust to taste)

1 cup cherry tomatoes, halved

1 avocado, diced

1 can (15 oz) black beans, rinsed and drained

1/4 cup red onion, finely chopped

Optional toppings: sliced jalapeños, crumbled feta cheese, chili flakes

Instructions
 

Begin by rinsing the jasmine rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from being overly sticky.

    In a medium saucepan, combine the rinsed rice and vegetable broth (or water). Bring it to a boil over high heat. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is tender and the liquid is absorbed.

      While the rice is cooking, prepare the zesty lime dressing. In a small bowl, mix together the olive oil, lime zest, lime juice, garlic powder, onion powder, cumin, and salt. Whisk until well combined.

        After the rice is cooked, remove it from heat and let it sit covered for 5 minutes. Afterwards, fluff the rice with a fork and pour the lime dressing over it, mixing gently to combine.

          In a large bowl or serving dish, create the rice base. Layer the lime cilantro rice, followed by the black beans, cherry tomatoes, avocado, and red onion.

            Finally, garnish the bowls with fresh cilantro, and if desired, add sliced jalapeños, crumbled feta cheese, and chili flakes for an extra kick.
