4 medium zucchinis

1 cup cooked quinoa

1 cup cherry tomatoes, halved

1/2 cup bell pepper, diced (any color)

1/2 cup feta cheese, crumbled

1/4 cup black olives, sliced

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried basil

1/2 tsp red pepper flakes (optional, for heat)

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Zucchini: Slice each zucchini in half lengthwise and scoop out the center with a spoon, leaving about 1/4 inch of the flesh intact. Reserve the scooped-out zucchini flesh for the filling.

      Sauté Vegetables: In a skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped zucchini flesh (from the scooping) and bell pepper, cooking until they are tender (about 4-5 minutes).

        Mix Filling: In a large bowl, combine the cooked quinoa, sautéed vegetables, cherry tomatoes, feta cheese, black olives, oregano, basil, red pepper flakes, salt, and pepper. Mix well until all ingredients are combined.

          Stuff Zucchini: Place the hollowed zucchini halves on a baking sheet, cut side up. Generously fill each zucchini boat with the quinoa mixture, pressing it down gently to pack it in.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the tops are golden brown.

              Garnish and Serve: Remove from the oven and sprinkle with fresh parsley. Let cool slightly before serving, and enjoy your healthy and delicious Mediterranean Zucchini Boats!
