Ingredients

1 cup all-purpose flour

1 cup cornmeal

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp ground cumin (for a subtle warmth)

1/4 cup granulated sugar

1 cup buttermilk (or plant-based milk with 1 tsp vinegar)

2 large eggs

1/4 cup melted butter (or coconut oil)

1 cup grated zucchini (about 1 medium zucchini)

1 cup corn kernels (fresh, frozen, or canned)

1/2 cup shredded cheddar cheese (optional for a cheesy twist)

Fresh herbs (like chives or cilantro), for garnish

Instructions

Preheat your waffle maker according to manufacturer’s instructions.

In a large mixing bowl, whisk together the all-purpose flour, cornmeal, baking powder, baking soda, salt, cumin, and sugar until well combined.

In a separate bowl, mix the buttermilk, eggs, and melted butter until fully blended.

Pour the wet ingredients into the dry ingredients and gently fold until just combined; do not overmix.

Stir in the grated zucchini, corn kernels, and cheddar cheese (if using) until evenly distributed throughout the batter.

Lightly grease the waffle maker with cooking spray or oil. Pour an appropriate amount of batter onto the center of the preheated waffle maker (usually about 1/2 to 3/4 cup, but check your maker's instructions).

Close the waffle maker and cook until the waffles are golden brown and crispy, usually about 4-5 minutes (again, timing may vary based on your specific waffle maker).

Carefully remove the waffle and keep it warm in a low-heated oven while you repeat with the remaining batter.

Serve the waffles warm, garnished with fresh herbs and a drizzle of honey or maple syrup for added flavor, if desired.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4 (makes about 4 large waffles)
