2 medium zucchinis, thinly sliced

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon dried oregano

1 teaspoon garlic powder

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

1 teaspoon red pepper flakes (optional)

2 ready-made flatbreads or pita breads

Fresh basil leaves for garnish

Balsamic glaze for drizzling (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prep the Zucchini: In a large mixing bowl, toss sliced zucchini with olive oil, salt, pepper, oregano, and garlic powder until evenly coated.

      Roast the Zucchini: Spread the zucchini slices on a baking sheet in a single layer. Roast in the preheated oven for 10-12 minutes until slightly golden and tender. Remove from the oven and set aside.

        Prepare the Flatbreads: While the zucchini is roasting, place the flatbreads on a different baking sheet.

          Assemble the Flatbreads: Evenly distribute the roasted zucchini over the flatbreads. Sprinkle the crumbled feta cheese and shredded mozzarella cheese on top. If desired, add red pepper flakes for a bit of heat.

            Bake the Flatbreads: Return the flatbreads to the oven and bake for an additional 10-12 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Remove from the oven, let cool for a minute, then garnish with fresh basil leaves and a drizzle of balsamic glaze if using. Cut into slices and serve warm.
