Zucchini Fritters with Garlic Dip

For the Zucchini Fritters:

2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup grated Parmesan cheese

2 large eggs, beaten

2 green onions, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon black pepper

1/2 teaspoon paprika

Olive oil, for frying

For the Garlic Dip:

1/2 cup Greek yogurt

2 tablespoons mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper, to taste

Fresh dill or parsley, for garnish (optional)

Instructions
 

Prep the Zucchini:

    - First, grate the zucchinis and place them in a clean cloth or paper towel. Sprinkle with 1 teaspoon of salt and let sit for about 10 minutes to draw out moisture. After 10 minutes, wring out the excess moisture from the zucchinis.

      Mix the Fritter Batter:

        - In a large mixing bowl, combine the drained grated zucchini, all-purpose flour, grated Parmesan cheese, beaten eggs, chopped green onions, minced garlic, oregano, black pepper, and paprika. Stir until all ingredients are well incorporated.

          Heat the Oil:

            - In a large skillet, heat about 1/4 inch of olive oil over medium heat. You’ll know it’s ready when a small drop of batter sizzles upon contact.

              Fry the Fritters:
