1 cup chorizo sausage, casings removed (or plant-based chorizo)

1 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 tsp smoked paprika

1/2 tsp cumin

Salt and pepper to taste

2 tbsp olive oil

Fresh cilantro or parsley, chopped (for garnish)

4 large eggs (optional for serving)

Heat the Pan: In a large skillet, heat the olive oil over medium heat. Once hot, add the diced chorizo. Cook for about 5-7 minutes until the chorizo is browned and crispy, stirring occasionally.

    Sauté Vegetables: Add the diced onion and bell peppers to the pan. Sauté for another 3-4 minutes until they soften and become fragrant.

      Add Garlic and Spices: Stir in the minced garlic, smoked paprika, and cumin. Cook for 1-2 minutes until the garlic is fragrant.
