4 large zucchinis, sliced lengthwise into thin strips

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

¼ cup grated Parmesan cheese

1 large egg

2 cups marinara sauce

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare Zucchini: Preheat your oven to 375°F (190°C). Use a mandolin or a sharp knife to slice the zucchinis lengthwise into thin strips, about ¼ inch thick. Sprinkle them lightly with salt and let them sit for about 15 minutes to draw out excess moisture. Pat dry with paper towels.

    Make Filling: In a large mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, garlic, dried oregano, dried basil, red pepper flakes (if using), and a pinch of salt and pepper. Mix well until creamy and fully combined.

      Assemble Roll Ups: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take one zucchini strip, place a spoonful of the cheese mixture at one end, and roll it up gently. Place seam side down in the baking dish. Repeat the process with all zucchini strips, packing them side by side.

        Add Sauce and Cheese: Once all the roll ups are in place, pour the remaining marinara sauce over the top. Sprinkle the remaining ½ cup of mozzarella cheese over the sauce.
