2 large zucchinis

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon cumin

Salt and pepper, to taste

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup shredded cheddar cheese (or plant-based cheese for a vegan option)

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 jalapeño, sliced (optional)

Sour cream or Greek yogurt (for serving, optional)

Salsa (for serving)

Instructions
 

Prepare the Zucchini Chips:

    - Preheat the oven to 425°F (220°C).

      - Slice the zucchinis into thin rounds or planks, about 1/4 inch thick. Pat them dry with a paper towel to remove excess moisture.

        - In a large mixing bowl, toss the zucchini slices with olive oil, garlic powder, paprika, cumin, salt, and pepper until evenly coated.

          Bake the Zucchini:

            - Lay the zucchini slices in a single layer on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway, until the edges are crispy and lightly browned. Keep an eye on them to avoid burning.

              Layer the Nachos:

                - Once the zucchini is out of the oven, reduce the temperature to 375°F (190°C).

                  - On a large oven-safe platter or a lined baking sheet, distribute the baked zucchini chips evenly.
