2 medium zucchinis, spiralized

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell peppers (mixed colors), diced

1/3 cup red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

3 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Prepare the Zucchini Noodles: Use a spiralizer to create zucchini noodles. If you don’t have a spiralizer, you can also use a vegetable peeler to create thin ribbons. Place the noodles in a colander, sprinkle with a little salt, and let them drain for about 10 minutes to remove excess moisture.

    Mix the Vegetables: In a large bowl, combine the cherry tomatoes, cucumber, bell peppers, red onion, Kalamata olives, and parsley.

      Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.

        Assemble the Salad: Add the drained zucchini noodles to the bowl with the mixed vegetables. Pour the dressing over the salad and toss everything gently until the noodles and vegetables are well-coated with the dressing.
